Formerly known as the Bistro Soleil, Mark Jordan at the Beach is a joint venture between Patrick and Treena Burke, owners of The Atlantic Hotel, and Mark and Magda Jordan.

 

Mark has headed up the kitchen brigade at The Atlantic Hotel since his arrival in the island in 2004 and Ocean Restaurant has held a much coveted Michelin star for the last ten years.

Mark’s career started at the early age of 15 when he worked for Keith Floyd in Devon and over the years he has gained from the experience of working with many influential chefs such as Jean Christophe Novelli and Albert Roux.

Since joining the team at The Atlantic in 2004, Mark has enjoyed great success at Ocean Restaurant which is now one of the most highly ranked hotel restaurants in the UK with four AA Rosettes and a Michelin Star as well as at Mark Jordan at the Beach which is the proud holder of two AA Rosettes and a Michelin Bib Gourmand. He has also appeared in several TV shows.

Magda Jordan

Magda Jordan

In 2003 Magda graduated from the University of Lodz with a Masters degree in Geography and Tourism and Hotel Studies and moved to the UK to serve an apprenticeship at Gilpin Lodge Hotel where she met her future husband, Mark Jordan.

Magda then worked at the five star Chester Grosvenor before relocating to Jersey with Mark in 2004 where she took up a position as a receptionist at The Atlantic Hotel. In 2007 Magda was promoted to Head Receptionist. Magda is also a qualified beautician and most recently gained a distinction in levels 1 and 2 of her bookkeeping course. Magda’s passions include her two children, skiing, dancing and of course being Manager at Mark Jordan at the Beach.

Tamas Varsanyi

Tamas Varsanyi

Originating from Budapest in Hungary, Tamas Varsanyi started his career working at the city’s Corinthia Grand Hotel Royal, before gaining experience in hotels and restaurants in Cyprus, India and Montenegro.

In 2012, Tamas arrived in Jersey and started as Chef de Partie at Mark Jordan at the Beach. Tamas progressed to the position of Sous Chef before being promoted to lead the kitchen under the direction of Executive Head Chef Mark Jordan in 2014.

Andrew Guilfoyle

Andrew Guilfoyle

Born and bred in Lancashire, Andrew came to the island in 2009 and worked at The Atlantic Hotel as a commis waiter. Having discovered a passion for food and wine, Andrew worked his way up the ladder at Ocean Restaurant before joining the newly formed team at Mark Jordan at the Beach when it first opened in 2011.

He became Head Waiter in 2012 and was promoted to Front of House Manager in 2013. In his spare time Andrew finds it hard to leave catering behind him and loves to try his hand at cooking and baking. His creative nature also leads to a passion for art and music. To keep fit Andrew likes to jog and swim.

Mark Jordan at the Beach is a sister restaurant to Ocean Restaurant at The Atlantic Hotel which has held a Michelin star for the last ten years and four AA Rosettes since 2012 making it one of the most highly rated restaurants on the island.
